The goal of these posts is to keep an accurate log of what I eat every day, even when those meals may not be particularly glamorous. That’s the case for this week’s food diary.
I’ve been stress-eating a lot of carbs lately. I managed to get some veggies in, thanks to my cauliflower cheese bake, but this week hasn’t been the healthiest.
(And the tastiest, too!) These simple 4-ingredient ladoos are a perfect introduction to the amazing world of Indian dessert. They are so creamy and delicious, I couldn’t stop eating them even before they cooled down. Did I mention it’s a one-pot recipe?!

Tried something new this week: baking with marmite! Nope, it’s not as weird as it sounds and it tastes awesome. Other things I made this week include cassava cake and taquitos.
Found an awesome vegetarian meat product this week, and tried a yogurt made with buffalo milk. I also surprised my coworkers with some Valentine’s macarons!
Not too pleased with this week’s food diary. I tried out a lot of new recipes this week, but only had middling success. I made a bunch of beginner mistakes this week (did you know mashed potatoes shouldn’t be put in a blender?) and now I’m feeling kind of stupid.
Happy Chinese New Year! I achieved a milestone of only eating homemade meals for this week’s food diary. This week’s successful dishes include spinach cheddar waffles, a savoury vegan oatmeal, and homemade fries! Among the fails are an attempt at protein donuts and an avocado alfredo sauce.
Didn’t cook as much this week since I went back to Waterloo for the weekend, where I ate out for every meal. Lots of misses in the kitchen in this week’s food diary, but there are some success stories in here too!!
Now that I’ve got an access card for the office, I can start bringing microwaveable food to reheat at lunchtime without fear of getting locked out! I really put effort into meal prepping most of my meals this week to save time.
