Not too pleased with this week’s food diary. I tried out a lot of new recipes this week, but only had middling success. I made a bunch of beginner mistakes this week (did you know mashed potatoes shouldn’t be put in a blender?) and now I’m feeling kind of stupid.
Happy Chinese New Year! I achieved a milestone of only eating homemade meals for this week’s food diary. This week’s successful dishes include spinach cheddar waffles, a savoury vegan oatmeal, and homemade fries! Among the fails are an attempt at protein donuts and an avocado alfredo sauce.
Didn’t cook as much this week since I went back to Waterloo for the weekend, where I ate out for every meal. Lots of misses in the kitchen in this week’s food diary, but there are some success stories in here too!!
Now that I’ve got an access card for the office, I can start bringing microwaveable food to reheat at lunchtime without fear of getting locked out! I really put effort into meal prepping most of my meals this week to save time.
Make a delicious, filling soup in your slow cooker or pressure cooker that’s high in fiber and protein. It’s perfect for meal prep, and I always stock a portion or two in the freezer. Both the vegan and omni versions of this Instant Pot soup are delicious.
What a hectic week. I’m getting settled into my new sublet, and cooking has been a struggle at times because I’m still in the process of stocking my pantry with essentials. I’ve been relying heavily on baked goods and stuff I can cook in my Instant Pot (when am I not?) for this food diary.
